The leaves were handpicked in July 2010, withered and hand fried in a wok in the traditional manner. They were then charcoal roasted for a short period to dry and finish the leaves.
The flavour is exceptionally pure, with honey notes and fresh, sweet huigan.

I don't as a rule like the very green oolongs that seem to have swept the market... one person's light 'vegetal' taste is another [well my] stewed spinach water with added bitterness [or no flavour if you brew so cold you avoid the bitterness]... anyway all that is by way of saying when I got a sample of this with my last order I guessed it would be better than my normal experience and that I would be able to see why others would like but I didn't expect to actually enjoy it and yet that is what happened - the first time I have really 'loved' this style of tea... I am sure it is all down to the difference between artisanal and factory production and also when Mr EoT says handpicked and insect nibbled he really means this...
so to me this did taste of fruit, sweet, pure and refreshing... I think the review by RC nails it - you can brew this either gongfu or western [i did both] and it doesn't have that awful bitterness of cheaper green oolongs

This is probably the nicest example I've found of this tea . Full of autumnal aroma's and flavour's - burnished apple wood , ripe orchard fruits , autumn leaves , honey , some delicate fragrant floral notes around the edges , - all of these seem to be enveloped in a fine wine like character / flavour . It is extremely pure and has great finesse as it caresses your senses and trickles down your throat ! (Posted on 12/11/2011)

This is a very flexible tea that is almost impossible to mess up. It can be brewed English style for several minutes or it can be brewed gongfu style. Either way it will not become bitter or undrinkable no matter what you do to it.
Brewed gongfu style, the first couple of steepings are very honey like. There is also a very light hint of roasting in the flavor which quickly fades. Over the next few brews the taste becomes less sweet with just a touch of tannins for a nice balance. This tea is very durable. To get the most out of it keep brewing it over and over using longer and longer steeping times. Don't worry it will not get bitter!
